Chili Con Carne
- 2 tbsp oil
- 1 None onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tsp chili powder
- 2 tsp ground cumin
- 1 lb ground beef
- 1 (13.5 oz) can tomatoes
- 1 (13.5 oz) can mixed beans
- None None fresh cilantro leaves, for garnish
- None None rice, to serve
- None None tortilla chips, to serve
- None None salsa, to serve
- None None sour cream, to serve
- Heat oil in a large frying pan over high heat. Saute onion and garlic for 2-3 mins, until tender. Add tomato paste and spices. Cook for 1 min. Add ground beef. Cook for 4-5 mins. Add tomatoes and 1 cup water. Bring to a boil, reduce heat and simmer for 10 mins. Add beans and simmer for 5 mins. Season.
- Garnish with fresh cilantro. Serve with rice, tortilla chips, salsa and sour cream.
