Prilleken German Doughnuts
- 1 cup milk
- 4 cups all purpose flour
- 1 oz fresh yeast, crumbled
- 1 cup sugar + 1 tbsp
- 3 oz butter, softened
- 1 tsp vanilla extract
- 2 None eggs
- 1 pinch salt
- 5 oz raisins
- 1/2 tsp cinnamon
- 4 1/4 cups oil
- Gently warm the milk. Sieve the flour into a bowl and make a small well in the middle. Crumble the yeast into the well and add the warm milk and 1 tbsp of sugar and fold in the flour from the edge of the bowl and mix into a liquid dough. Cover, and keep in a warm place for 15 minutes.
- Mix 1/2 cup of sugar, the butter, vanilla extract, eggs and salt in a bowl. Pour in the remaining milk and knead everything with the dough hook of a hand mixer into a smooth dough. Knead in the raisins, cover and keep in a warm place for 45 more mins. Mix the rest of the sugar and the cinnamon.
- Heat the oil to 350u0b0F. Cut smallish pieces from the dough with a tablespoon, form them into balls and cook them in batches in the hot oil until golden. While they're still hot, sprinkle them with the cinnamon sugar.
