Penne With Bacon And Radicchio

  1. Cook pasta in boiling salted water according to package instructions. Drain and reserve 1/4 cup pasta water.
  2. Meanwhile, heat oil in the pan and fry bacon, shallots and garlic for 2 mins. Add radicchio and cook over medium heat for 3-4 mins. Add reserved pasta water, orange juice, olives, capers and pine nuts and bring to a boil. Toss with pasta, basil, and Parmesan cheese. Season and serve garnished with orange zest.
