Penne With Bacon And Radicchio
- 200 g penne pasta
- 2 tbsp pine nuts
- 3 tbsp olive oil
- 50 g smoked bacon, diced
- 2 None shallots, peeled and finely diced
- 1 small clove garlic, peeled and finely diced
- 1 head radicchio, cut into thin strips
- 1 None small orange, juiced, plus grated zest of 1/2
- 2 tbsp black olives
- 1 tbsp capers
- 4 sprigs fresh basil, leaves stripped from stems
- 30 g Parmesan, grated
- Cook pasta in boiling salted water according to package instructions. Drain and reserve 1/4 cup pasta water.
- Meanwhile, heat oil in the pan and fry bacon, shallots and garlic for 2 mins. Add radicchio and cook over medium heat for 3-4 mins. Add reserved pasta water, orange juice, olives, capers and pine nuts and bring to a boil. Toss with pasta, basil, and Parmesan cheese. Season and serve garnished with orange zest.
