Banana Walnut Bread
- 1/2 cup butter, at room temperature
- 1/2 cup granulated sugar
- 2 None eggs, at room temperature
- 7 oz mashed ripe bananas + 1 banana, sliced
- 1 cup self-rising flour + 2 tbsp
- 1/2 tsp baking soda
- 2 tsp ground cinnamon
- 1 tsp ground cardamom
- 1 1/4 cups walnuts, coarsely chopped
- 1 tbsp brown sugar
- None None strawberries, to serve
- None None vanilla yogurt, to serve
- Preheat oven to 350u0b0F. Grease and line an 8x4 inch loaf pan with parchment paper. Cream butter and sugar until light and fluffy. Add eggs, 1 by 1, beating well after each addition. Add mashed banana. Sift and fold in flour, baking soda and spices until just combined. Transfer to prepared pan.
- Toss together sliced banana, walnuts and brown sugar then spread evenly over top of batter in pan. Bake for 55 mins, or until a skewer inserted in the center comes out clean. Let cool for 10 mins in pan then transfer to a wire rack to cool completely. Serve with strawberries and yogurt.
