Baked Sausages With Tomatoes And White Beans
- 8 None beef sausages, such as kielbasa
- 4 None tomatoes, halved if large
- 8 None shallots, peeled and quartered
- 4 None rosemary sprigs
- 4 cloves garlic
- 1/2 cup red wine
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 2 tsp sugar
- 8 oz sourdough bread, torn (about 1/2 loaf)
- 14 oz can cannellini beans, rinsed, drained
- None None Arugula leaves, to serve
- Preheat oven to 400u0b0F.
- Arrange sausages, tomato, shallots, rosemary, and garlic in a large baking dish.
- In a bowl, combine wine, 2 tablespoons oil, vinegar and sugar; pour into baking dish and season to taste.
- Bake 30 minutes. Add sourdough to baking dish; drizzle with remaining olive oil.
- Bake 10 minutes. Spoon beans into baking dish; bake a further 4-5 minutes, until bread is crisp and golden.
- Serve with arugula.
