Pork Souvlaki With Potato Wedges And Coleslaw
- 9 tbsp olive oil
- 1 None lemon, peel grated and lemon juiced
- 3 stems oregano, leaves picked and chopped
- 2 cloves garlic, chopped
- 1 3/4 lbs boneless pork chops, cubed
- 1/4 cup balsamic vinegar
- 1 tsp cumin seeds
- 1/2 tsp sugar
- 1 None green cabbage (about 2 lbs), thinly sliced
- 1 None onion, finely chopped
- 5 oz roasted red pepper, sliced
- 1 3/4 lbs potatoes, cut into wedges
- Preheat the oven to 400u0b0F. Mix 3 tbsp of the oil, lemon peel and juice, oregano and garlic in a large bowl. Add the pork and toss to coat well. Refrigerate for 6 hours to marinate.
- For the coleslaw, mix the vinegar, 3 tbsp of the oil, cumin and sugar in a large bowl. Add the cabbage, onion and peppers; toss to coat well. Season with salt and pepper. Refrigerate until ready to serve.
- Place the potatoes on a baking pan. Drizzle with the remaining 3 tbsp oil and season with salt and pepper. Bake for 30 mins or until golden.
- Thread the marinated pork onto skewers. Heat a grill pan to medium heat. Cook the skewers for 8-10 mins, turning occasionally, until cooked through.
- Serve the potatoes and pork skewers with the slaw on the side. Serve with tzatziki, if desired.
