Mustard Sausages With Red Onion Marmalade

  1. Heat olive oil and butter over medium heat. Cook onions for 10-12 mins, stirring occasionally, until soft. Add red wine, vinegar and sugar. Bring to a boil then reduce heat and simmer for 5 mins, until liquid has evaporated. Let cool slightly.
  2. Meanwhile, heat oil over medium heat in a separate frying pan. Cook for 10-12 mins, until browned and cooked through. Add mustard, honey and parsley. Gently heat, stirring, until sausages are coated in the warm mixture. Spoon onion marmalade and juices over sausages.
  3. Serve on a bed of creamy mashed potatoes and savoy cabbage.
