Beef Enchiladas
- 4 tbsp oil
- 2 None onions, peeled and finely diced, separated
- 1 clove garlic, peeled and chopped finely
- 3/4 lb ground beef
- 1/2 cup Mexican seasoning
- 1 cup corn
- 2 tbsp tomato paste
- 1 can (14-15 oz) chopped tomatoes
- 1/4 cup drained, sliced pickled jalapenos
- 8 None 6-inch corn tortillas
- 3 tbsp sour cream
- 3/4 cup crumbled queso fresco or feta cheese
- Heat 2 tbsp of oil in a frying pan and saute 1 onion, garlic, and ground beef for about 5 mins. Add the Mexican seasoning and corn and season to taste.
- In a separate pan, saute the other onion in the remaining oil. Stir in the tomato paste and chopped tomatoes and simmer it for about 5 mins. Add the jalapenos.
- Preheat the oven to 400u0b0F. Warm the tortillas very briefly and spread them with the meat sauce. Roll them up and put them in a baking dish. Pour the tomato sauce over them, followed by the sour cream and cheese. Bake them for about 15 mins.
