Roasted Portobellos With Garlic And Feta Cheese

  1. Preheat oven to 400u0b0F.
  2. Place mushrooms on a large baking tray. Sprinkle evenly with thyme and garlic. Drizzle with olive oil. Season. Bake for 15-20 mins, until tender.
  3. Meanwhile, in a large frying pan, heat butter over high heat. Saute spinach for 1 min, until just wilted. Arrange evenly over toasted ciabatta slices. Top with mushrooms and sprinkle with feta. Drizzle with a little balsamic vinegar. Serve with roasted cherry tomatoes.
