Potato, Mushroom And Bacon Casserole

  1. Preheat oven to 350u0b0F. Cook potatoes in boiling water for 20 mins. Then drain and remove skins.
  2. Heat 2 tbsp oil in a large frying pan and saute mushrooms for 5-7 mins. Remove mushrooms, add 1 tbsp oil to pan and cook ground beef for 5 mins. Add onions, and saute for another 5 mins. Add tomato paste, and season with salt, pepper and paprika. Pour in cream and stock, return mushrooms to pan and simmer for 5 mins.
  3. Slice potatoes and place in bottom and around sides of a baking dish. Spoon beef mixture on top of potatoes. Top with bacon slices, and sprinkle with thyme and grated Gouda.
  4. Bake for 30 mins until surface is crispy. Serve with a garnish of oregano.
