Potato, Mushroom And Bacon Casserole
- 1 3/4 lbs potatoes
- 1 1/2 lbs mushrooms, cleaned and thickly sliced
- 3 tbsp olive oil
- 2 None onions, peeled and finely diced
- 1 lb ground beef
- 2 tbsp tomato paste
- 1 pinch paprika
- 3/4 cup whipping cream
- 1 1/4 cup vegetable stock
- 5 sprigs thyme, chopped
- 4 slices bacon, parcooked
- 1/2 cup Gouda, grated
- None None oregano, to garnish
- Preheat oven to 350u0b0F. Cook potatoes in boiling water for 20 mins. Then drain and remove skins.
- Heat 2 tbsp oil in a large frying pan and saute mushrooms for 5-7 mins. Remove mushrooms, add 1 tbsp oil to pan and cook ground beef for 5 mins. Add onions, and saute for another 5 mins. Add tomato paste, and season with salt, pepper and paprika. Pour in cream and stock, return mushrooms to pan and simmer for 5 mins.
- Slice potatoes and place in bottom and around sides of a baking dish. Spoon beef mixture on top of potatoes. Top with bacon slices, and sprinkle with thyme and grated Gouda.
- Bake for 30 mins until surface is crispy. Serve with a garnish of oregano.
