Lamb Stoba
- 2 tbsp vegetable oil
- 2 1/4 lb deboned lamb shoulder, trimmed, roughly chopped
- 2 None medium onions, thinly sliced
- 1 inch fresh ginger, thinly sliced
- 2 None fresh long red chilies, thinly sliced
- 1 None red pepper, roughly chopped
- 2 tsp ground cumin
- 2 tsp ground allspice
- 1 None cinnamon stick
- 2 (13.5 oz) cans chopped tomatoes
- 2 tsp lime zest
- 2 tbsp lime juice
- 1/4 cup light brown sugar
- Heat 1 tbsp oil in a large saucepan. Cook lamb, in batches, until browned all over. Remove from pan.
- Add remaining oil. Cook onions, ginger, chilies, pepper and spices, stirring, until onions have softened. Return lamb to pan along with remaining ingredients. Simmer, covered, for 1 hour, or until lamb is tender.
