Macadamia, White Chocolate And Craisin Cookies
- 8 tbsp (1 stick) butter, at room temperature
- 3/4 cup packed brown sugar
- 1 None egg
- 1 tsp vanilla extract
- 1 cup flour
- 1 cup self-rising flour
- 7 oz chopped white chocolate
- 1/2 cup coarsely chopped macadamia nuts
- 1/2 cup craisins (dried cranberries)
- Preheat the oven to 325u0b0F. Line 2 baking pans with parchment paper.
- Beat butter and sugar in a large bowl with an electric mixer until pale and creamy. Add egg and vanilla and beat well.
- Stir in sifted combined flours until just blended. Stir in chocolate, nuts and craisins.
- Roll level tablespoons of mixture into balls. Place half on trays, 2 inches apart, and flatten slightly.
- Bake in 2 batches, 15-20 mins each, until golden brown. Cool in pan 2 mins. Remove from pan; cool completely on wire rack.
