Apple Walnut And Cranberry Loaf

  1. Preheat oven to 350u0b0F. Grease and flour an 11 inch loaf pan. Combine toasted walnuts and cranberries. Set aside. Sprinkle diced apples with 2 tbsp lemon juice.
  2. Cream butter and sugar. Add beaten eggs then flour and baking powder. Fold in walnut cranberry mixture, reserving 1 tbsp for garnish, and diced apples. Transfer to prepared pan and bake for 1 hour, or until a skewer inserted in the center comes out clean. Let cool in pan for 20 mins then turn out onto a wire rack to cool completely.
  3. Mix powdered sugar with 2-3 tbsp lemon juice and stir until smooth. Drizzle over cake and sprinkle with remaining 1 tbsp walnut-cranberry mixture. Set aside for 30 mins, until icing is set.
