Duo Of Mousses
- 7 oz dark chocolate, broken into pieces
- 3 1/2 oz white chocolate, broken into pieces
- 1/2 cup sugar
- 2 1/2 cups heavy cream
- 3 None medium egg whites
- None None Cocoa powder, to dust
- None None White chocolate curls and mint leaves to decorate
- Place the dark and white chocolate in separate bowls. Set over pans of simmering water. Stir until melted; remove from heat. Heat the sugar with 6 tbsp water to dissolve. Stir two-thirds into the melted dark chocolate. Stir the remainder into the melted white chocolate. Cool to room temperature.
- Whip the cream to soft peaks. In a separate clean bowl, with clean beaters, whisk the egg whites to soft peaks. Fold two-thirds of the cream and egg whites into the dark chocolate mixture. Fold the remaining cream and egg whites into the white chocolate mixture.
- Divide half the dark chocolate mousse between 6 individual dishes. Add a layer of the white chocolate mousse on top, then finish with the remaining dark chocolate mousse. Chill for 2 hours until set. Dust the tops with a little cocoa powder. Serve decorated with white chocolate curls and mint leaves.
