Warm Potato Salad

  1. In a pot over high heat, bring salted water with potatoes to boil in enough water to cover. Cook for 10-15 mins. Let potatoes cool for 15 mins. Cut into cubes.
  2. In a food processor, puree cottage cheese for 3 mins or until smooth. Transfer to a large bowl. Whisk in mayonnaise, lemon-pepper, seasoning salt and mustard. Combine remaining ingredients to coat. Gently add in potatoes. Serve at room temperature.
