Semolina Cake With Spiced Honey Syrup
- 1 cup butter, chopped, softened
- 1 cup granulated sugar
- 2 tbsp honey
- 1 tsp vanilla extract
- 5 None eggs
- 1 3/4 cups semolina
- 1/2 cup ground almonds
- 2 tsp baking powder
- None None Spiced Honey Syrup
- 1/2 cup granulated sugar
- 1/4 cup honey
- 1 None cinnamon stick
- 5 None cardamom pods, bruised
- None None heavy cream, to serve
- Preheat oven to 350u0b0F. Lightly grease a 10 inch cake pan.
- Cream butter, sugar, honey and vanilla until light and creamy. Add eggs, 1 at a time, beating well after each addition. Fold in semolina, ground almonds and baking powder. Transfer to prepared pan, smooth top and bake for 55-60 mins, or until a skewer inserted in the center comes out clean.
- Meanwhile, to make the spiced honey syrup, combine sugar, honey, spices and 1 cup water over low heat, stirring, until sugar dissolves. Bring to a boil, reduce heat and simmer for 8-10 mins, until reduced by 1/2.
- Remove cake from pan and place on a wire rack over a shallow tray. Pierce cake all over top with a skewer. Pour 1/2 of the hot syrup over hot cake. Let cool to room temperature. Serve drizzled with reserved syrup and cream.
