Curried Meatballs With Green Beans And Chinese Cabbage
- 8 oz ground beef
- 2 tsp yellow curry paste
- 1/4 cup coarsely chopped cilantro
- 2 tbsp peanut oil
- 1 None onion, thinly sliced
- 4 oz green beans, trimmed and halved
- 1 clove garlic, crushed
- 1 None long green chili pepper, thinly sliced
- 1 tsp curry powder
- 12 oz Chinese cabbage, coarsely shredded
- 2 tbsp coconut cream
- Combine ground beef, curry paste and 1 tbsp of the cilantro in medium bowl. Roll level tablespoons of mixture into balls.
- Heat half the oil in wok on high heat. Stir-fry meatballs, in batches, until cooked through. Remove from wok.
- Heat remaining oil in wok. Stir-fry onion and green beans until beans are tender. Add garlic, chili pepper and curry powder; stir-fry until fragrant. Return meatballs to wok with cabbage, coconut cream and the 1/4 cup water; stir-fry until cabbage wilts. Season to taste. Sprinkle with remaining cilantro to serve.
