Chicken Breats With Mushroom Sauce
- 2 tbsp olive oil
- 4 None boneless skinless chicken breasts
- 7 oz button mushrooms, thinly sliced
- 1 clove garlic, crushed
- 1 cup dry white wine
- 2 tbsp lemon juice
- 1/2 cup heavy cream
- None None Steamed vegetables, to serve
- Heat 1 tbsp of the oil in a large skillet on medium heat. Add the chicken and cook for 4-5 mins each side, until browned and cooked through. Remove from skillet and keep warm.
- Heat remaining 1 tbsp oil in same pan on medium heat. Add the mushrooms and garlic and saute for 2-3 mins, until mushrooms are just tender. Add wine and lemon juice. Bring to a boil.
- Reduce heat to low; simmer for 4-5 mins until reduced by half. Stir in cream. Season to taste. Simmer for 2-3 mins until thickened slightly. Serve chicken sliced with mushroom sauce and steamed vegetables.
