Arabian Chicken Salad(Makes Large Amount - Serves 4 To 6)
- 8 to 10 chicken breasts, boned, cooked and skinned
- 4 c. cold, slightly undercooked rice
- 1 lb. cooked small shrimp
- 1 clove garlic
- 1 large cucumber, peeled, seeded and diced
- 1 onion, chopped
- 1 c. mayonnaise
- 1/2 c. French dressing, preferably Kraft
- 6 Tbsp. chili sauce or catsup
- frilly lettuce leaves
- 3 tomatoes, cut in wedges
- Cut chicken in small pieces.
- Combine with rice and shrimp in a large bowl that has been rubbed with garlic clove.
- Add cucumber and onion.
- Combine mayonnaise, French dressing and chili sauce. Combine with other ingredients.
- Chill in garlic rubbed bowl.
- Add lettuce leaves around top and decorate with tomato wedges just before serving.
