Hoisin Beef Skewers
- 1 1/4 lb beef, cut into 1 inch pieces
- 1 None large red pepper, deseeded, cut into 1 inch pieces
- 2 None large zucchini, thickly sliced
- 4 None spring onions, cut into 1 1/4 inch pieces
- 1/3 cup hoisin sauce
- 1 tbsp soy sauce
- 2 tsp sesame oil
- 16 oz hokkien-style egg noodles, soaked in boiling water for 5 mins then drained
- 1 cup fresh cilantro, chopped
- 1 tbsp sesame seeds, toasted, to garnish
- None None lemon wedges, to serve
- Preheat broiler. Thread beef, pepper, zucchini and spring onions onto 8 skewers. Combine hoisin sauce, soy sauce, sesame oil and 2 tbsp water. Warm sauce then brush 1/2 over skewers. Spray skewers with oil then cook under broiler, turning, for 6-8 mins for medium, or until beef is cooked to your liking. Set aside, cover with foil and let rest for 5 mins.
- Meanwhile, toss noodles with remaining sauce and cilantro. Transfer to serving plates and top with skewers. Sprinkle with toasted sesame seeds and serve with lemon wedges.
