Spiced Pork Tenderloin With Orange And Red Wine Sauce
- 1 1/4 lbs pork tenderloin, trimmed
- 2 None oranges, peel finely grated
- 1 None orange, juiced
- 1/4 cup olive oil
- 1 tbsp mixed spice, such as pumpkin pie spice
- 8 oz green beans, trimmed and blanched
- 1/2 small red onion, finely chopped
- 2 tsp seeded mustard
- None None FOR THE ORANGE AND RED WINE SAUCE
- 1 cup red wine
- 1 None orange, juiced
- 1/2 cup chicken stock
- 1/4 cup sugar
- 4 sprigs thyme
- 2 tbsp cold butter, chopped
- Preheat the oven to 400u0b0F.
- Place pork in a bowl with combined orange peel, juice, 1 tbsp oil and spice. Toss to coat; set aside 10 mins.
- For the orange and red wine sauce, place wine, juice, stock, sugar and thyme in a medium saucepan on high heat. Bring to a boil. Reduce heat to low; simmer 8-10 mins, until thickened slightly. Remove from heat; stir in butter.
- Heat 1 tbsp of the oil in a large oven proof skillet on medium heat. Sear pork all over until browned. Place pan in oven and roast 5-10 mins, until cooked to desired doneness.
- Place warm beans, onion, remaining 2 tbsp oil and mustard in a bowl. Toss well; season to taste.
- Serve sliced pork on a bed of beans. Drizzle with sauce.
