Spicy Grilled Chicken

  1. Combine chicken and marinade in a bowl; turn to coat well. Let stand 15-20 mins, to marinate.
  2. Microwave potatoes on high 8 mins, until tender. Place cooked potatoes in a baking pan; crush lightly with a fork. Add olives, lemon peel, oil and thyme leaves. Season. Toss to combine. Place under a preheated broiler for 5 mins, until golden.
  3. Meanwhile, preheat a lightly oiled grill to medium-high. Grill chicken 5-6 mins each side, until crisp and cooked through. Serve chicken with crushed potatoes and thyme sprigs.
