Zesty Macadamia Chocolate Biscotti
- 2 1/3 cups flour
- 1/2 tsp baking soda
- 5 oz chopped macadamia nuts
- 3/4 cup sugar
- 2 oz milk chocolate, chopped
- 1 tbsp instant coffee powder
- 3 None large eggs, lightly beaten
- 2 tsp orange liqueur
- 1 None orange, zested
- Preheat oven to 375u0b0F. Lightly grease and flour a baking sheet. For the dough, sift flour and baking soda into a large bowl. Stir in macadamia nuts, sugar and chocolate. Place coffee powder and 2 tbsp boiling water in a bowl and stir to dissolve. Whisk in egg, liqueur and zest. Make a well in the center of dry ingredients, add coffee mixture and stir to combine. Turn out onto a lightly floured surface. Cut in half and shape into 2 logs, about 2 inches wide. Place on prepared baking sheets and bake 20-25 mins. Cool.
- Using a serrated knife, cut each log into 1/2 inch slices. Arrange on baking sheets and bake 5-10 mins, until crisp. Transfer to a wire rack to cool. Serve or store in an airtight container.
