Fresh Apple Cake

  1. Combine oil, sugar and eggs in large mixer bowl; beat well. Sift flour, salt, soda and baking powder.
  2. Add to egg mixture; beat well.
  3. Stir in 1 teaspoon vanilla.
  4. Fold in apples.
  5. Pour into greased and waxed paper-lined 10-inch tube pan.
  6. Bake at 350u0b0 for 1 hour.
  7. Cool in pan for several minutes.
  8. Invert onto serving plate.
  9. Combine confectioners sugar with enough water to make thin glaze.
  10. Stir in remaining 2 teaspoons vanilla.
  11. Drizzle over cooled cake.
  12. Sprinkle with walnuts.
  13. Yield:
  14. 16 servings.
