Cheddar Pepper Biscuits Filled With Sausage And Onions
- 2 cups self-rising flour
- 3 tbsp butter, chopped, plus 2 tsp
- 2 oz Cheddar cheese, grated
- 1 None small red pepper, finely chopped
- 1 tsp dried oregano leaves
- 1 cup milk
- 2 tsp vegetable or olive oil
- 2 None medium red onions, thinly sliced
- 8 None thick beef sausages
- None None mixed greens, to serve
- Preheat oven to 425u0b0F. Line a baking tray with parchment paper.
- Sift flour into a large bowl. Cut in 3 tbsp butter until mixture resembles fine crumbs. Add cheese, pepper and oregano. Add milk and mix until just combined. Transfer to a lightly floured work surface and knead until mixture comes together. Shape into 4 balls. Place on prepared tray and lightly coat with oil. Bake for 15-20 mins, or until golden.
- Meanwhile, melt remaining butter with oil in a large frying pan over medium heat. Cook onions, stirring occasionally, for 15 mins, or until golden. Set aside. Wipe pan clean. Cook sausages for 8-10 mins, or until cooked through. "Butterfly" sausages. Halve rolls then stuff with sausage and onions.
- Serve with mixed greens.
