Lamb With White Bean Salad
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 medium ripe tomato, finely chopped
- 1 medium ripe avocado, finely chopped
- 1/4 cup finely chopped flat-leaf parsley
- 2 tbsp finely chopped chives
- 2 tbsp finely chopped basil
- 2 tbsp lemon juice
- 2 tbsp vegetable oil
- 2 tsp wholegrain mustard
- 1 clove garlic, crushed
- 4 None lamb loin chops
- Combine beans, tomato and avocado in a large bowl.
- Combine herbs, lemon juice, oil, mustard and garlic in a medium bowl. Stir half the herb mixture into bean salad.
- Heat an oiled grill pan on medium-high heat or preheat the grill to medium. Season the lamb chops. Cook for 3-4 mins each side for medium or until cooked to desired doneness.
- To serve, place bean salad on plates. Top with lamb and remaining herb mixture.
