Pear And Raspberry Crumbles
- 1 cup all-purpose flour, plus 2 tbsp
- 1/2 cup butter, chopped
- 1 1/4 cups rolled oats
- 1/3 cup shredded coconut
- 1 tsp ground cinnamon
- 1/3 cup granulated sugar
- 3 cups thick vanilla yogurt
- 1 (28 oz) can pear halves in syrup, drained, thinly sliced lengthwise
- 3 oz frozen raspberries, thawed
- Preheat oven to 400u0b0F. Grease and line a baking tray with parchment paper. Place flour in a bowl. Cut in butter until mixture resembles coarse breadcrumbs. Stir in oats, coconut, cinnamon and sugar. Spread mixture over prepared tray and bake, stirring occasionally, for 4-5 mins, or until golden. Let cool on tray.
- Spoon 1/2 the yogurt into 4 (14 oz) serving glasses. Top with 1/2 the pears, 1/2 the raspberries and 1/2 the oat mixture. Repeat layers, finishing with oat mixture. Serve topped with extra raspberries.
