Spicy Tomato And Olive Pappardelle

  1. Heat oil in a saucepan and saute onion for 2 mins. Add garlic and cook for 1 min. Add tomato paste and cook for 1 min, then add tomatoes, chili and stock. Season and add a pinch of sugar then simmer for 15 mins. Crush tomatoes and add basil. Simmer for another 15 mins. Add olives.
  2. Meanwhile, cook pasta in boiling salted water according to package instructions. Drain and toss with sauce. Garnish with basil.
