Shrimp And Squid Stir-Fry
- 1/4 cup honey
- 1 tbsp fish sauce
- 1 tbsp oil
- 6 None green onions, thinly sliced
- 2 stalks lemongrass, thinly sliced
- 1 piece (2 inches) ginger, shredded
- 2 cloves garlic, crushed
- 1 lb large shrimp, peeled and deveined, tails intact
- 2 None squid bodies, scored and cut into pieces
- 10 oz snow peas, sliced
- 1 cup snow pea shoots
- None None Steamed rice and lemon wedges, to serve
- Combine honey and fish sauce in a small bowl.
- Heat oil in a wok or large skillet on medium-high heat. Add green onions, lemongrass, ginger and garlic and stir-fry for 1 min.
- Add shrimp and squid. Toss to combine. Cook on high heat for 3-5 mins, until shrimp change color and squid is cooked through. Add honey mixture and snow peas and stir-fry for 1 min, or until snow peas are tender.
- Sprinkle with pea shoots and serve with steamed rice and lemon wedges.
