One-Pot Rice Pilaf With Spinach And Feta
- 1/4 cup olive oil
- 4 None green onions, finely chopped
- 2 cloves garlic, finely chopped
- 1 1/2 cups long-grain rice
- 1/3 cup finely chopped fresh dill
- 10 oz spinach, chopped
- 1 cup crumbled feta cheese
- 2 tbsp toasted pine nuts
- 1 tsp sumac
- None None Mint leaves, for garnish
- Heat 2 tbsp of the oil in a large saucepan on medium heat. Cook onions and garlic, stirring, for 5 mins, until soft. Add rice and dill and cook for 2 mins. Add spinach and enough water to cover and stir until spinach wilts.
- Add remaining 2 tbsp oil and season to taste. Reduce heat to low; cover and simmer for 20-30 mins, stirring once or twice to prevent mixture from sticking to pan, until rice is cooked and liquid absorbed. Remove from heat. Sprinkle with feta. Cover and let stand for 5 mins.
- Spoon into a bowls. Top with pine nuts, sumac and mint to serve.
