Bolognese Sauce

  1. Heat oil in a large Dutch oven over high heat. Saute onion, celery, carrot, pancetta and garlic for 3-4 mins, until vegetables are tender. Add ground beef and cook for 4-5 mins, until browned. Stir in tomato paste and cook for 1 min. Add tomato puree, diced tomatoes, wine, bay leaves and oregano. Bring to a boil then reduce heat and simmer for 20-25 mins, until thickened. Season then fold in parsley.
