Colorado Green Chili(Chile Verde Con Puerco)

  1. Cut meat into bite sized pieces.
  2. Brown meat with a little flour in small amount of corn oil.
  3. When brown, add the remainder of the flour and oil and stir until flour and oil are completely mixed.
  4. Chop chilies into small pieces.
  5. Put pork, chilies, garlic, tomatoes and some water into a large pot or pressure cooker.
  6. Add water stirring until consistency of gravy is reached.
  7. Add salt and cumin.
  8. Simmer until tender and flavors blend, about 1 hour.
  9. Stir when finished.
  10. Add more water if needed, or simmer with cover off if too thin, until proper consistency is reached.
  11. Pour over burritos or use as enchilada sauce.
