Really Good Candied Baked Beans
- 1 lb. dry butter or large lima beans
- 1 small bottle (approximately 10 oz.) ketchup
- 1 lb. dark brown sugar
- 1 lb. bacon
- 1 medium onion, chopped
- 1 tsp. prepared mustard
- 1 dash Tabasco or hot sauce (optional)
- Soak beans overnight per package directions.
- In same water, bring to boil, reduce heat and simmer, covered, 1 hour.
- Drain and transfer to baking dish.
- Saute bacon (I chop mine into bite-size pieces before cooking).
- Remove with slotted spoon.
- Add to beans. Saute onion in bacon drippings until tender.
- Drain and add to beans.
- Add remaining ingredients and stir gently.
- Bake 1 hour in 350u0b0 oven.
- This is perfect for a buffet, as it retains its good flavor when cooled.
- This can be made a day or two in advance and refrigerated.
- Allow an extra 15 minutes cooking time.
