Peanut Butter Chocolate Chip Cookie Bars
- 1/2 cup whole wheat self-rising flour
- 1/2 cup flour
- 2 cups rolled oats
- 1 cup flaked coconut
- 1 cup firmly brown sugar
- 2/3 cup crunchy peanut butter
- 6 tbsp (3/4 stick) butter
- 1/4 cup honey
- 1 None egg, lightly beaten
- 1 cup chocolate chips
- Preheat the oven to 350u0b0F. Grease and line a 12 x 8-inch baking pan with parchment paper, extending paper above long sides for handles.
- Sift flours into a large bowl. Stir in oats, coconut and sugar.
- Combine peanut butter, butter and honey in a small saucepan. Stir on low heat for 1-2 mins, until melted and combined. Stir into flour mixture. Stir in egg, then 1/2 cup of the chocolate chips. Press into prepared pan. Sprinkle with remaining chocolate chips.
- Bake for 20-25 mins, until golden. Cool in pan on a wire rack. Cut into bars. Store in an airtight container.
