Mocha Pudding With Vanilla Whipped Cream
- 1 cup self-rising flour
- 1 tbsp instant coffee
- 2 1/2 tbsp cocoa powder
- 3/4 cup brown sugar
- 1/2 cup low-fat milk
- 1 None large egg
- 3 tbsp butter, melted
- 1 1/2 tsp vanilla extract
- 2 1/2 oz dark chocolate, melted
- 3/4 cup heavy cream
- Preheat oven to 350u0b0F. Lightly grease a 5 cup ovenproof dish. For the pudding, sift the flour, coffee and 1 tbsp cocoa powder into a medium bowl. Stir in 1/4 cup of the brown sugar. In a separate bowl, whisk the milk, egg, butter and 1 tsp vanilla extract. Gradually whisk into the dry ingredients. Add the chocolate and whisk until smooth, then spoon the batter into the prepared dish and level the top.
- For the sauce, combine 1 1/4 cups boiling water with the remaining sugar and cocoa powder in a heatproof bowl. Carefully pour onto the pudding. Bake for 20-25 mins, or until firm. Cool for 5 mins.
- Meanwhile, using an electric mixer, beat the cream and 1/2 tsp vanilla extract in a small bowl until soft peaks form. Serve with the pudding.
