Tamarind Glazed Pork Roast

  1. Preheat oven to 350u0b0F. For the glaze, combine all ingredients in a saucepan, bring to a boil then reduce heat and simmer 3-5 mins. Set aside 1/3 cup of the glaze for the gravy.
  2. Place a roasting pan on the stove, add the oil and heat. Quickly brown the meat on all sides until just golden, then brush liberally with the glaze. Roast about 2 hours, or 40 mins per 1 lb of meat. A meat thermometer should read 160u0b0F when meat is cooked to medium. Remove from oven and let rest 15 mins.
  3. Meanwhile, for the gravy, heat the stock and tamarind glaze in a saucepan over medium heat until bubbling. Season with a pinch of salt and 2-3 tsp sugar, to taste. Mix the cornstarch with 1 tbsp cold water and stir into the hot gravy. Heat, stirring, until thickened. Slice the pork and serve with the gravy.
