Flourless Almond Cake With Strawberry Coulis
- 3.5 oz dark chocolate, chopped
- 1/2 cup butter, chopped
- 2 tbsp marsala
- 1/2 cup granulated sugar
- 3/4 cup ground almonds
- 1 tbsp instant coffee granules, mixed with 1 tbsp hot water
- 3 None large eggs, separated
- 9 oz strawberries, hulled
- 1/4 cup powdered sugar, plus extra for dusting
- None None whipped cream, to serve (optional)
- Preheat oven to 350u0b0F. Grease a deep 8 inch cake pan and line base and sides with parchment paper.
- Stir chocolate and butter in a small saucepan over low heat until melted. Add marsala, sugar, ground almonds and coffee. Transfer to a large bowl and beat in egg yolks, 1 at a time. Whip egg whites to soft peaks then gently fold in. Transfer to prepared pan and bake for 45 mins, or until a skewer inserted in the center comes out clean. Let cool in pan then cover and chill for 3 hours or overnight.
- Meanwhile, to make the strawberry coulis, blend or process strawberries and powdered sugar until smooth.
- Transfer cake to a cutting board. Cut into slices with a hot knife. Dust cake with powdered sugar. Serve with strawberry coulis and whipped cream, if desired.
