Quesadillas With Avocado Smash
- 1 tbsp vegetable or olive oil
- 2 cloves garlic, crushed
- 1 medium red onion, finely chopped
- 1 lb ground beef
- 1 pkg (1 oz) taco seasoning mix
- 1 can (11 oz) Mexicorn, drained and rinsed
- 8 large (8 inches) flour tortillas
- 3/4 cup coarsely grated Cheddar cheese
- 1 large avocado, coarsely mashed
- 1 tbsp lemon or lime juice
- 1 None fresh long red chili pepper, finely chopped
- None None Sour cream, to serve
- Heat oil in a large skillet on high heat. Add garlic, onion and ground beef; cook, stirring with a wooden spoon to break up lumps, for 8-10 mins or until beef is browned. Add taco seasoning mix, corn mixture and 1/4 cup water. Bring to a boil. Remove from heat.
- Preheat a sandwich press or a medium nonstick skillet on medium heat. Spray one side of 4 tortillas with no stick cooking spray. Place tortillas, oiled-side down, on a flat surface. Top each with 1 1/2 tbsp cheese, 1/4 of the beef mixture, then another 1 1/2 tbsp cheese. Top with remaining tortillas; spray with cooking spray.
- For the avocado smash, place avocado, juice and chili pepper in medium bowl. Stir to combine.
- Toast quesadillas in batches in press or skillet for 2-3 mins, turning, or until tortillas are crisp and golden and cheese is melted. Cut quesadillas into wedges. Serve with Avocado Smash and sour cream.
