Fried Potatoes With Smoked Pork
- 1 1/4 lb new potatoes
- 4 tbsp oil
- 1 1/4 lb boneless smoked pork loin, cut into cubes
- 2 None bell peppers (1 red and 1 yellow), deseeded and cut into strips
- 1 None red onion, peeled and cut into strips
- 2 sprigs rosemary, 1 needles removed and coarsely chopped, 1 left whole for garnish
- 1/4 cup vegetable stock
- 3 None spring onions, sliced
- 1/2 cup Parmesan cheese, grated
- 3/4 cup store-bought tzatziki sauce
- Cook the potatoes in boiling water for 15-20 mins. Drain and peel. Heat 2 tbsp of oil in a large nonstick frying pan and saute the potatoes for 5 mins until golden, turning as necessary. Season and set aside.
- Add 2 tbsp oil to the pan and sear the pork for 3-4 mins, turning as necessary. Add the peppers, onion and chopped rosemary. Add the stock and bring it to a boil. Add the potatoes and 3/4 of the spring onions and simmer. Season to taste.
- Serve the pork and potatoes sprinkled with the Parmesan and the remaining spring onions with a dollop of tzatziki. Garnish with the sprig of rosemary.
