Chilled Soba Noodles
- 1 2/3 cups dashi
- 1/3 cup soy sauce
- 1/3 cup mirin
- 10 oz soba noodles
- 1 None nori sheet, cut into fine strips with scissors
- 2 None green onions, thinly sliced on the diagonal
- 2 tbsp daikon, grated and squeezed
- 1 tsp wasabi (optional)
- For the dipping sauce, mix dashi, soy sauce and mirin in a large bowl. Refrigerate to chill.
- Bring a large pot of lightly salted water to a boil. Add soba noodles and return to a boil. Cook 5-8 mins until just cooked (al dente). Drain noodles into a sieve and rinse under cold running water. Rub noodles together with hands to remove excess starch. Place into a bowl of iced water until completely chilled. Drain well and divide among 4 serving plates; sprinkle with nori strips.
- Serve each plate of noodles with an individual bowl of dipping sauce. Arrange condiments on small individual dishes or on a plate to share.
