Creamy Thyme Chicken With Grapes

  1. Heat oil in a frying pan on high. Cook chicken 2 mins each side, until golden. Remove from pan. Reduce heat to medium. Saute onion 2-3 mins, until tender. Add garlic and cook 30 seconds. Add wine to pan and deglaze. Cook 1 min, to reduce slightly. Stir in grapes, stock and thyme. Bring to a boil. Return chicken to pan and reduce heat to low. Simmer 8-10 mins, until chicken is cooked through. Add green beans for final minute. Slice chicken and arrange on plates with the green beans and grapes. Keep warm.
  2. For the sauce, pour cream into pan juices. Bring to a simmer and cook 1-2 mins, until thickened slightly. Pour on chicken. Serve with extra grapes and bread.
