Double-Strawberry Cheesecake

  1. Reserve 1 cup dry cake mix.
  2. In large mixing bowl, combine remaining cake mix, 1 egg and oil.
  3. Mixture will be crumbly.
  4. Press mix evenly on bottom and up 3/4 of the side of a 13 x 9 x 2-inch baking pan.
  5. In same bowl, blend the cream cheese and sugar.
  6. Add 3 eggs and reserved cake mix.
  7. Beat 1 minute at medium speed.
  8. At low speed, add milk, lemon juice and food color.
  9. Mix until smooth. Pour into crust and bake at 300u0b0 for 50 to 60 minutes, until center is firm.
  10. Chill.
  11. Spread topping before serving.
