Gluten-Free Marble Bundt Cake
- 1/2 cup butter or margarine
- 2/3 cup granulated sugar
- 3 None eggs
- 1 2/3 cup gluten-free flour
- 2 tsp baking powder
- 1/2 cup milk + 2 tbsp
- 1 tbsp cocoa powder
- 1 tsp vanilla extract
- 1/4 lb white chocolate, coarsely chopped then melted
- 1/2 lb milk chocolate, coarsely chopped then melted
- Preheat oven to 325u0b0F. Grease a Bundt pan. Cream butter, sugar and 1 pinch of sugar. Add eggs, 1 at a time. Add flour and baking powder, alternating with 1/2 cup milk. Transfer 2/3 to prepared pan and smooth. Add remaining milk, cocoa powder and vanilla extract to remaining batter and transfer to pan. Run a fork through the mixture to create a marbling effect then bake for 50-60 mins. Remove from oven, let rest 15 mins in pan then remove and let cool completely on a wire rack.
- To finish, cover cake with milk chocolate and chill 10 mins. Drizzle white chocolate over cake and chill for another 10 mins then serve.
