Chicken Mole

  1. Heat 1 tbsp of the oil in a saucepan, add the onion and garlic and stir-fry for 3-5 mins until starting to brown.
  2. Add the banana, chopped tomatoes, tomato paste and the bullion cube to the pan. Mix well. Add the spices and cocoa powder and cook, stirring, for 10 mins (add a little water if necessary).
  3. Meanwhile, heat the remaining oil in a skillet, season the chicken breasts and add to the pan and cook for 7-8 mins each side, until cooked through. Serve in slices with the sauce. Scatter over the raisins, sliced almonds and chiil slices. Serve with rice. Garnish with parsley.
