Curry-Shrimp Creole

  1. Saute onions, green pepper, celery and garlic in oil until tender.
  2. Stir in tomatoes, parsley, catsup, lemon juice, salt, hot sauce, curry powder and thyme.
  3. Bring to boil.
  4. Cover, reduce heat and simmer for 30 minutes.
  5. Add shrimp.
  6. Cover and simmer 5 minutes, or until shrimp turn pink.
  7. Serve over hot cooked rice. Serves 4.
