Banana Cream Pie

  1. Preheat oven to 400u0b0F. Whip egg whites with 3 tbsp warm water, gradually adding sugar, until stiff. Add egg yolks then fold in flour and baking powder. Transfer to a large rimmed baking tray and bake for 12-14 mins. Remove and cool on a wire rack.
  2. Spread jam over cake then drizzle banana halves with lemon juice and distribute evenly on top. Whisk 6 cups heavy cream and 4 tsp vanilla extract until stiff then spread over bananas and cut cake into 18 pieces. Whip remaining heavy cream and vanilla extract then transfer to a piping bag and decorate the edges of each cake to form a rim. Spread eggnog inside rim and chill for 45 mins.
  3. Transfer chocolate to a piping bag then use to decorate cakes. Chill for 30 mins before serving.
