Char Grilled Vegetable Salad
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 tsp maple syrup
- 1 tsp Dijon mustard
- 1 clove garlic, minced

- 3.5 oz baby arugula
- 4 oz char-grilled eggplants, drained, sliced
- 5 oz marinated artichokes, drained, halved
- 3.5 oz semi-dried tomatoes, drained
- 4 oz char-grilled peppers, drained, sliced
- 1 1/2 oz black olives
- 3/4 cup croutons
- 3.5 oz feta cheese, crumbled
- To make the salad dressing, whisk together olive oil, lemon juice, maple syrup, mustard and minced garlic. Season to taste.
- In a large bowl, combine arugula, vegetables and olives. Add croutons and dressing. Toss to combine. Sprinkle feta over top. Serve.
