Tempura Salmon With Honey Soy

  1. To make the dipping sauce, whisk together lime juice, sesame oil, soy sauce, honey, cilantro and sesame seeds. Set aside.
  2. Toss salmon in flour, shaking off excess. Set aside.
  3. Half-fill a deep fryer or large heavy-bottomed saucepan with oil and heat to 350u0b0F.
  4. Meanwhile, sift cornstarch and baking soda into a bowl. Add water, ice and egg white. Mix gently - the batter should be quite lumpy. Season to taste.
  5. Dip salmon into batter, letting excess drain off. Working in batches, deep-fry salmon for 2-3 mins, until crispy and golden brown. Transfer to paper towels to drain. Serve tempura with dipping sauce and stir-fried snow peas.
