Hearty Stew
- 1 lb. lean boneless round steak, cut in cubes
- 2 c. cubed carrots
- 1 medium onion, cut in eighths
- 2 1/4 c. cubed red potatoes
- 1 (14 1/2 oz.) no-salt tomatoes
- 1 c. water
- 1 c. brewed coffee
- 2 Tbsp. molasses
- 1 Tbsp. Worcestershire sauce
- 1 beef bouillon cube
- 1/2 tsp. thyme
- 1/2 tsp. marjoram
- 1/4 tsp. hot sauce (optional)
- 1 bay leaf
- 1 (15 oz.) can pinto beans
- Trim fat from steak.
- Spray Dutch oven with cooking spray. Brown on all sides.
- Remove and place on paper towel to drain. Wipe grease from oven.
- Re-coat with spray.
- Add carrots and onion. Saute until slightly brown.
- Return steak to pan.
- Add all other ingredients.
- Stir and simmer on low for 1 1/2 hours.
- Add beans and simmer 30 minutes.
- Yield:
- 2 1/2 quarts.
- Serving size:
- 1 cup.
