Bucatini With Moroccan Lamb Sauce
- 2 tsp olive oil
- 1 None onion, finely chopped
- 2 cloves garlic, crushed
- 1 lb ground lamb
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cinnamon
- 2 tbsp tomato paste
- 1 can (28 oz) crushed tomatoes
- 1 None zucchini, coarsely chopped
- 2 tbsp finely chopped fresh mint
- 13 oz bucatini pasta or spaghetti
- Heat oil in large saucepan on medium-high heat. Cook onion and garlic, stirring, until onion softens. Add ground lamb; cook, stirring, until browned. Add spices; cook, stirring, until fragrant.
- Stir in tomato paste, undrained tomatoes and zucchini; bring to a boil. Reduce heat to low; simmer, uncovered, about 15 mins or until sauce thickens slightly. Stir in mint.
- Meanwhile, cook pasta in large saucepan of boiling water until tender; drain. Serve pasta topped with sauce.
